An attractive display to accompany any main dish
Yield: 8 servings
2 | lbs. | fresh baby green beans, trimmed | |

2 | medium zucchini | ||

1/2 | cup | butter | |

|||
1 | tablespoon | Balsamic vinegar | |
|
|||
1/4 | teaspoon | salt | |
|
|||
1/4 | teaspoon | freshly ground pepper | |
|
Cook green beans in boiling water to cover 5 to 7 minutes or until crisp-tender; drain and cool.
Cut off ends of zucchini. Then cut remainder of each zucchini into 4 (1-1/2 inch thick) slices for a total of 8 slices. Remove a strip of peel around middle of each slice with a citrus stripper. Scoop out center of each slice, leaving 1/4-inch thick ring.
Divide beans into 8 bundles. Insert a bundle into each ring. Place in an 11x7-inch baking dish. Cook butter in a small saucepan over medium high heat, stirring often, until deep golden brown. Remove from heat; stir in vinegar, salt, and pepper. Pour over bean bundles. Bake covered, at 350 F. for 15 to 20 minutes.
